The company’s grains, processed by an original stone mill, give a peculiar and inimitable feature to the “special flours’’ which are called Timilia, Perciasacchi, Maiorca and Russello. These special flours, produced in 1000kg per day, have particular properties especially for their ancient nature. The process that is carried out with the stone-mill, which preserve all of these properties and allow to the milled wheat to keep its benefits.
For instances, the Perciasacchi semolina didn’t suffer any genetic alteration and for this sensitive reason its glycaemic index is lower than products derived from soft wheat, which make it possible to include it in low-calories diets.
The Perciasacchi is perfect for home-made bread or pizza base and dry pasta.
The Timilia semolina is one of the most ancient between the types of semolina and is one of the lighter and more digestible variety, in Sicily is used for bread and pizza bases.
The Russello variety is another quite ancient type of semolina which was not altered during the centuries. Its properties are similar to Timilia because of its digestibility, perfect for sweets, drown to bronze pasta and bread.
The Maiorca semolina is full of proteins and low in gluten, about 50% less than other commonly used grains. It is recommended for sweets bases, white breads, pizza and breadsticks. The re-milled semolina is perfect for bakery and the production of pasta.
The impressive heritage of Arabs in Sicily has made cous-cous one of the main meals, that’s the reason why high attention is put in the Sicilian specialty production, of incredible tastiness and quality; the cous-cous produced, which has an expiration time of six months, is produced in maximum capacity of 150 tons per day.
