This family-owned company was established in the early years of the 900s and now is managed by the founder's son who, even maintaining the original methods of rural sheep-farming, ancient traditions associated with the production and processing of milk and its craft derivatives, has been able to build a company into full compliance with the rules dictated by the sanitary EC regulations.

Since 1994, the company follows the guidelines and the rules of the organic production. Regarding the business infrastructure, the company covers an area of 105 hectares of arable land and pastures all destined for the sheeps grazing. Well established in the domestic market, the company intends to offer its products also to foreign markets. The cheese produced is intended to meet the demand for a specific target of the niche consumer.

The organic products offered are the result of a method of production that is controlled in all its phases by inspection bodies. Even the introduction of innovations that the dairy technology has made available, the traditional production process has remained unchanged.

The company offers "pecorino" cheese made with milk from its sheep, goat rennet paste and salt. The cheese is seasoned and aged in company boards of beech wood and it is periodic subject to overturnings and surface treatments with organic olive oil. In particular, the company offers a wide range of "pecorino varieties":
- semi-aged for 20 to 40 days;
- aged for 60 to 180 days;
- very aged from 9-15 months;
- reserve from 16 to 24 months;
- great reserve from 24 months;
- aged, matured in Barrique barrels with spring herbs and walnuts leaves;
- aged, matured in vinegar of autochthonous grape;
- mature aged cheese, matured with durum wheat bran organic.

The company's offer includes another sheep cheese specialty, "ricotta pecorina" organic cheese. This product is made with sheep's whey milk and salt. Two varieties are proposed:
- aged for 25 to 20 days;
- aged and smoked with orange or olive wood.

The company is looking for trade intermediaries (distributors, agents) to offer these traditional South Italy cheese abroad.
